Keto Kuisine – Chocolate Peanut Butter Cups

I’ve got the perfect recipe for anyone who’s trying to cut out carbs without
cutting all the fun out of life. I’ve been living a Keto lifestyle for a year now, and I feel like I keep hitting the jackpot thanks to all of the amazing health benefits.

That being said, sugar is truly evil. You know it’s bad for you by the way it tempts you like an addiction and, as soon as you give it up, it makes you feel like you’re missing out on something. Utter nonsense!

Just because you can’t eat sugar doesn’t mean you have to miss out on the finer points of life.

When my sweet tooth is getting the better of me, I reach for Keto cheesecake. There’s nothing better than cheesecake for calming those cravings and satisfying your body’s real need for fatty goodness.

These heavenly cups whip up in minutes, require very few ingredients, and unlike many Keto recipes where everything is mixed from scratch, they make minimal mess in your kitchen. I store these in mason jelly jars in my fridge and reach for them any time I need something sweet. They’re very handy for those moments when I need a pick me up.

Like any other Keto dessert, you will see the word “erythritol” in this recipe card. This is a scary-looking word for a zero-calorie sweetener naturally derived from corn. It belongs to a category of sweeteners called sugar alcohols.

You can use Swerve, order a different erythritol brand from an online health food store (which is what I do) or substitute with a sweetener of your choice. Other naturally derived sweeteners which won’t activate insulin or take you out of ketosis include xylitol, stevia and monk fruit.

Arguably, the best part of this recipe is the ganache, which feels like such a decadent splurge on a Keto diet. For that, Publix sells sugar-free chocolate chips, but the best brand is Lily’s because they are made with stevia and contain ingredients that are much safer for your body and the environment.

I have been ordering Lily’s with my vitamins, but I think Publix will start carrying them if we ask. If you don’t have time for a Publix run because you’ve GOT to have cheesecake NOW, any dark chocolate chip will do as long as you keep the ganache to a minimum and keep your overall macros low.

You could leave the ganache off altogether because the cheesecake is yummy enough without it, but I recommend spoiling yourself once in a while.
